Ingredients
3⁄4 cup (190ml) water
1⁄4 cup (25g) rolled oats (or brown rice flakes or quinoa flakes if gluten-free)
A pinch of cinnamon or more to suit your taste vibes
2 tbsp vanilla protein powder
1⁄2 medium banana mashed
1 tsp maple syrup
3 walnuts chopped
2 tsp crunchy natural peanut butter (or other nut butter) blended with a little hot water to a paste
Simple Blueberry Jam
1⁄4 cup (40g) fresh or frozen blueberries
1 tsp water
Method
Pop the water, oats, cinnamon and a pinch of salt in a saucepan, then bring it to a gentle simmer, cooking for a few minutes.
Add protein powder and banana, and stir until thick and creamy, then remove from the heat.
At the same time, make the jam by adding ingredients to a saucepan. Cook, stirring frequently, until thick and jammy.
To serve, place oats in a bowl and top with blueberry jam, maple syrup, walnuts and peanut butter.
